Stir Fry

Stir Fry With Chicken and Vegetables

4 chicken breast halves, boneless & skinless
2 tablespoons vegetable oil
2 tablespoons soy sauce
1 1/2 tablespoons cornstarch
1 large red bell pepper, cut into squares
1 medium red onion, cut in thin wedges
1 large broccoli spear, separated into florets
3/4 cup chicken broth
1/4 teaspoon red pepper flakes
2 cloves garlic, crushed
1 small can water chestnuts, drained
Cut chicken into cubes. Place the chicken in a bowl and add 1 teaspoon of the oil, 1 tablespoon soy sauce and 1/2 teaspoon cornstarch. Toss to coat chicken. In a small bowl, combine broth, red pepper flakes and remaining soy sauce and cornstarch.
In a large skillet, heat 1 tablespoon oil over medium-high heat. Add chicken. Stir-fry for 2 to 3 minutes or until chicken is opaque. Transfer chicken to plate. Add remaining oil, pepper, onion, broccoli, garlic and stir fry until onion starts to wilt. Add water chestnuts and chicken. Add broth mixture and bring to a boil. Cook, stirring constantly until the vegetables are tender-crisp, the chicken is done and the sauce has thickened a bit.
Serve over hot cooked rice.

Who doesn't love a good stir fry? You can always add teriyaki sauce too. ;) Very easy to cook as well.

  1. The only thing I disagree with is the water chestnuts. I hate those things. I prefer to add some crushed/chopped peanuts like a pad thai.

  2. Very cool. Thanks for the recipe. going to have to try this sometime.

  3. i just seasoned my wok a week or so ago. stir fry it is!

  4. That looks soooooooooo good.

  5. I can never tell when the veggies are considered 'crisp'. They are either burnt or not. This requires experimentation.

  6. if u could teach me how to make orange chicken id be very impressed :)

  7. Is a skillet like a fry-pan or a wok?

  8. Man, all the recipes you post are totally things I want to try making and eating!

  9. I have to agree with The Paper. I also would use less garlic.

  10. nice, I can't wait to see what you have to say in your next post

  11. Stirfry is always welcome, nice recipe.

  12. Oh my gosh. That looks so delicious. I'm going to try making it. Wish me luck lol.

  13. Gotta love stir fry. But did it fry? And did you stir it?
